bug: I noticed that when a strikethrough is applied to the text that when I export, the strikethrough is removed and only the regular text exports (i tested PDF and Word exports)

Great catch, thanks for flagging this Brian. I've just gone in and reworked how we handle exports to PDF/Word, previously we were converting Markdown which lost some formatting but now we're using HTML which preserves underlines, strikethrough's etc.
If you try again now it should export with strikethrough!
